One of three batches of rye whiskey from James E. Pepper independently bottled by That Boutique-y Whisky Company, each one finished in a different type of cask. As pointed out by James E. Pepper's owner Amir Peay on the label, this one was allowed a finishing period in Pedro Ximénez casks.
Nose: Sweet dried fruit, cream sherry and a touch of peppermint initially, with orange peel, walnuts and dusty rye spice in support.
Palate: New oak warmth and sherry-drenched dried fruit provide a balance between a toasted, dry mouthfeel and plenty of viscous and well-rounded sweetness. Notes of toffee popcorn, candied ginger and rye bread bring depth.
Finish: A light glaze of burnt honey remains.
